Chicken Pseudo-Gyros (Need Image)

I’ll add an image of the finished product when I actually make it again. The title’s just a reminder to me. Recipe below.

I obsess over Mediterranean food. I could eat it and only it for the rest of my life. I admittedly do Americanize this recipe considerably (as well as tweak it for my own laziness) but it scratches the itch well enough on a budget. This is not eaten the same day it’s prepared (you can, it just won’t taste as good) so plan accordingly. Save the onion!

Ingredients

  • 2 pounds boneless skinless chicken thighs (approximate weight)
  • 0.25 cup lemon juice (approximately the amount from one squeezed lemon)
  • 0.25 cup olive oil (or half this amount if you aren’t using fat-free greek yogurt)
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 tablespoon fennel seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon black pepper
  • 0.5 teaspoon pumpkin pie spice
  • 1 teaspoon curry powder
  • 2 cups greek yogurt
  • 1 yellow onion, halved and peeled
  • 2 wood skewers

Cooking Steps

  1. Add all ingredients except chicken, greek yogurt, onion and skewers to a large mixing bowl and stir well
  2. Add the yogurt and stir well
  3. Add the chicken, mix well and ensure all of the meat is coated with the mixture
  4. Cover the bowl and leave in the fridge overnight, or 1-2 hours if you cook the same day
  5. When ready to cook, preheat the oven to 400F
  6. Pierce the center of each onion half with a wood skewer so that it only pokes out from the rounded side of the onion half
  7. Line a large baking dish or tall-rimmed baking sheet with foil, then place the onion halves flat-side down so that the onion half acts as a base for the skewer
  8. Place the marinaded chicken thighs on the skewer evenly, spinning them horizontally so they’re placed in an ‘X’ pattern
  9. Remove any part of the skewer sticking out past the top of the chicken towers
  10. Add remaining yogurt marinade to the chicken towers
  11. Bake for 1.75 hours or until the deepest part of the chicken towers are at 155F

If you want the full Froswald College Meal Experience, get a pack of street taco tortillas (the small soft ones), some extra greek yogurt (or mayonaise if you want maximum creaminess), some hummus and black pepper. Add equal parts greek yogurt/mayonaise and hummus, black pepper to taste and smear it on the street taco along with some of the cooked chicken and a piece of the cooked onion. It’s not the healthiest and it may make yah-yah cry, but it was good eats while I spent my sleepless nights at Oliver Hall.
