These were an attempt to make sugar cookies that don’t get loaded with, you know…sugar, or a heaping of fat. They taste like a baked confection, but they’re more akin to maple cookies than anything. Very much a WIP recipe, but you may find you like the current result.
Ingredients
- 0.7 cup sugar substitute
- 2 teaspoons molasses
- 7 teaspoons unsweetened applesauce
- 2 egg yolks
- 4 teaspoons sugar-free maple syrup
- 0.25 teaspoon baking soda
- 0.25 teaspoon MSG
- 0.25 cup vanilla-flavored protein powder
- 0.3 cup bread flour
- 8 teaspoons all-purpose flour
Baking Steps
- Preheat oven to 340F (350F is acceptable. Reduce cook time by 1 minute if using 350F)
- Mix all ingredients in a medium mixing bowl for 30-40 seconds if using a powered mixer
- Form the dough into a ball, then leave it in the freezer for 45 minutes
- Separate dough into ~3 inch hockey puck shaped circles
- Bake for 10-12 minutes
- Take the cookies out of the oven and allow them to cool to room temperature before serving or storing
The cookies should be golden at the bottom, with soft tops when taken straight out of the oven.
