I’m fairly certain I came up with this recipe. It’s in a .txt file all lowercase with no credit attributed, which I’m usually good about. However, I don’t remember ever making them with chives. It’s probably good, right? I am a confident chef.
Ingredients
- 2 pounds loose sausage (i.e. not firm enough to hold its shape if removed from the casing)
- 1.25 pounds ground turkey or chicken
- 2 jalapenos, diced
- 1 bell pepper, diced
- 2 vidalia onions, diced
- 0.5 teaspoon salt
- 5 tablespoons garlic powder
- 1.5 tablespoon cayenne pepper
- 2 cups panko bread crumbs (roughly half a standard box)
- 4 capfulls of kitchen bouquet
- 1 tablespoon dried chives OR 0.25 cup fresh chives
Cooking Steps
- Preheat oven to 425F
- Remove sausage meat from its casing if it is not already
- Add all ingredients to a large mixing bowl, mix well
- Line baking dish or high-walled baking sheet with foil OR lightly grease
- Portion off into 1-2 inch wide meatballs and place evenly throughout the baking surface
- Bake for 25-30 minutes
