It’s just your standard potato salad, but I love dill and added a few other minor twists. No raisins, it’s okay.
Ingredients
- 4 pounds russet potatoes
- 1 red onion, diced
- 1 white onion, diced
- 0.5 bunch of celery, diced
- 7 large eggs
- 1.5 cup fresh parsley, chopped
- 5 tablespoons dried dill
- 2 tablespoons cayenne pepper
- 4 tablespoons ground black pepper
- 5 tablespoons furikake
- 5 tablespoons garlic powder
- 2 tablespoons crab boil
- 1 bottle of mayonnaise (approximately 0.6 large jar of mayonnaise)
- 2 cups greek yogurt
Cooking Steps
- Add potatoes to large pot, then add enough water to barely cover the potatoes
- Add crab boil to pot
- Boil potatoes whole and unpeeled for 10-20 minutes on medium-high heat
- Remove potatoes from pot and set aside
- Boil eggs in pot for 10-12 minutes
- Add parsley, celery, and onions to large mixing bowl
- Peel eggs, reserve yolks and dice whites before adding whites to the mixing bowl
- Chop potatoes to your desired size and add to the mixing bowl
- Add spices to a small bowl, mix well then add to the mixing bowl
- Add greek yogurt and mayonnaise to the mixing bowl, then crumble reserved yolks over the bowl
- Mix it all until blended
- Let rest 15-20 minutes before serving
